| Clear straw colour, only a few medium-sized bubbles in glass - but a soft fine mousse on the palate. Took 30 mins or so to open up - very tightly-wound and closed at first. Medium intensity nose, brioche, almost burnt toast, pastry, lemon peel, green apples, a little smokiness in the background. Palate is lemon, grapefruit and pears; very fresh, crystalline. A hint of boiled sweets but not at all cloying. A little minerality brings a nice tension with the fruit - medium acidity - very well balance, all in harmony. Long finish tastes of a "proper" lemonade. |
